Gingerbread cookies
1 cup shortening
1 cup sugar
1 egg
1 tsp vanilla
2 tsp baking soda
1/2 cup hot water
1/2 tsp cloves
3 tsp cinnamon
1 tsp salt
1 tsp ginger
6 cups flour
simmer molasses and shortening for 15 minutes
In large bowl, cream sugar, egg and vanilla.
Dissolve soda in hot water
Add soda and water mixture.
Add cloves, cinnamon, salt and ginger
Beat. Add molasses mixture, then bet in 6 cups of flour
Roll out dough and cut. NO flour is needed when rolling them. Bake 6-10 minutes.
*this dough is tricky....if you roll it out and you can't get ur shapes out nicely just ball it up again and keep trying. It seems to get easier the more it sits out and the more you work with it!
Yummy Fudge!
1 12oz can evaporated milk
2 12oz bags of choc. chips
1 7oz bottle of marshmellow cream
1 stick of butter
4 cups of sugar
On medium heat, bring sugar, butter and milk to a boil and boil for 7 minutes. Stir continuously.
Remove from heat
Add choc chips, marshmallows, and the broken Hershey bar.
Stir and pour into buttered pan.
* this makes a fantastic gift and stays good for a very long time!

Candied apple pie
1/2 cup sugar (less if ur apples are a little sweet)
1/2 tsp lemon juice
1/4 tsp cinnamon
1/3 cup red hots
1/4 tsp red food coloring
* stir contents in a bowl and let sit for about 15 minutes, stirring occasionally to mix the flavors
...pour into pie shell, cover with top crust. Brush with egg white and sprinkle with sugar and cinnamon. Bake for 15 mins on 425 then lower oven temp to 350 and bake for approximately 45 minutes or until bubbly.
Pie Crust:
2 cups flour
2/3 cup shortening plus 2 extra Tablespoons
1/2 tsp salt
4-5 Tbsp of water

Hashbrown Casserole
1 can cream of chicken soup
1 pint sour cream
2cups grated cheese
1/2 cup chopped onion
1 tsp. black pepper
2 cups crushed corn flakes
3/4 cup melted butter
combine potatoes, soup, sour cream, cheese, onions, and pepper. Mix well. Poiur into a large greased casserole dish. Top with corn flakes and drizzle with butter. Bake at 375 for about 1 hour.

Easy Dinner rolls
2 cups warm water
¼ cup melted butter
2 large eggs
6 ½ cups white flour
½ cup sugar
2 TBS. yeast
1 tsp salt
Combine all ingredients and mix either by hand or with mixer until you have a soft, smooth dough. Knead by hand for a few minutes or with a dough hook in your mixer. Place dough in greased bowl, turning once, and allow to rise for 1 hour.
Grease a 9 X 12 baking pan. Divide dough into 20 pieces, shaping into balls. Place in pan and cover. Let rise for 30-40 minutes or until they begin to get puffy. Bake at 375 degrees for about 20 minutes or until golden. (This will depend on your oven.) Cool on a rack and brush with melted butter. Makes 20 heavenly, buttery dinner rolls. Can be frozen with good results.

Indian Fry Bread
3 cups of flour
1/2 tsp salt
3 tsp baking powder
1/2 cup milk
Mix all ingredients...add a little water until it all forms a nice ball. Cover and let rest for about 20 minutes. Divide into the desired size (ur preference) roll out on floured surface.
Melt shortening in shallow sauce pan over med/high heat. Lay one of your "breads" in the oil and watch it bubble! When the edges start to brown, carefully turn over. When nicely browned on both sides remove from the pan.
* sprinkle this with powdered sugar and its just like ur at the fair. cover with fruit or jam and you've got breakfast. Smother with refried beans and pile on some hamburger, cheese and lettuce and you've got a navajo taco!
Either way you've got yumminess!

M&M butter cookies
2 eggs
1 and 1/2 tsp vanilla
1 cup br. sugar
1/2 cup sugar
cream these ingredients together
then add
2 and 1/4 cup flour
1 tsp baking soda
1 tsp salt
last add 1 and 1/2 cup M&M's
bake at 375 for about 9 minutes. Will be crispy around the edges but remain soft-ish in the center.

Chicken Enchilada Casserole
1 pkg corn tortillas
2 cans of cr. of chicken soup
1/2 small onion chopped (optional)
2-3 cups shredded cheese
7 oz (small can) of salsa verde
4 oz can of green chiles
Broil or bake chicken until cooked ( I prefer cooking bags with a little water!) Shred or cube. Mix soup, salsa verde, green chiles, and chicken in a large bowl.
Tear corn tortillas into 1/3ths (pie shaped pieces) and arrange tortillas on bottom of 9 x 13 pan. Spoon a thin layer of soup mixture over the tortillas and top with cheese. Repeat until mixture is gone. Bake at 350 for about 30 mins or until bubbly

Chocolate Chip Cheesecake Brownie Cups
- 1 pkg. (8 oz) cream cheese, softened
- 1 egg
- 1/3 c. sugar
- 1/2 t. vanilla
- 1/8 t. salt
- 1/2 – 1 c. chocolate chips
Parker House Rolls
1/4 cup warm water
1 cup milk, scalded
1/4 cup sugar
1/2 stick butter
1 tsp salt
3 1/2 cups flour
1 egg
Soften yeast in warm water. Combine milk, sugar, shortening, and salt; cool to lukewarm Add 1 1/2 cups of flour; beat well. Beat5 in yeast and egg. Gradually add remaining flour to form soft dough. Place in greased bowl, turning once to grease surface. Cover and let rise till double. (1 1/2 hour to 2 hours)
Turn out on lightly floured surface and shape as desired. (we use round cookie cutter) Using a butter knife press a crease in center of the circle but not cutting all the way through, dip one side in butter and fold in half. Cover and let rise till double (45 min) Baked on greased baking sheet in hot oven (400) for 12-15 minutes. Brush with melted butter when taken out of oven....enjoy!

country baked beans

Syrup for pumpkin waffles
1 cup sugar
1/2 cup buttermilk
1 tsp. Karo
Bring to boil, remove from heat. Add 1 tsp baking soda and 1 tsp vanilla
Pumpkin Waffles
2 T baking powder
1 T. sugar
1 T. Cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
4 eggs
1 and 1/2 cup milk
1/2 cup melted butter
1 tsp.vanilla
1 cup pumpkin
Granola
6 cups oats
6 cups rice krispies
1/2 cup or more chopped pecans
1/2 cup slivered almonds
1/2 cup chopped cashews
2 and 1/2 tsp salt
1 cup water
1 cup canola oil
2 cups pkd brown sugar
2 cups coconut
1 Tablespoon vanilla
*Mix salt and brwn sugar then add other dry ingredients. Last add oil and water. Bake at 225 for 2 hours.
-we added chocolate chips and it was delicious! could perhaps add a little cinnamon or even melted peanut butter! Experiment and discover your favorites. :)
Yummy chocolate cake
In small sauce pan bring to boil the following and set aside...
1 Cup butter
1 Cup water
4 T. heaping cocoa
Sift together the following:
2 Cups flour
2 Cups sugar
1/2 t. salt
Pour chocolate over dry ingredients, gently mix
In separate bowl combine the following:
2 Eggs, lightly beaten
1 t. soda -- dissolved in little water
1 t. vanilla
Combine with chocolate ingredients... then add
1/2 Cup sour cream
Gently mix. Do not over mix.
Can be baked how you like... cup cakes, 8.5 X11 pan, 8 or 9 in rounds, cookie sheet to get brownie like cakes... you decide. You an also decide how to bake it. The author of this cake could be anyone... *it is said that it is the Magleby's Restaurant cake... and well... if you bake it at 325 for 50 to 60 minutes then you can call it that. Or you can bake at 375 for 20-40 minutes. This cake can also be called Texas Fudge... some people use sour cream (Magleby's) or you can use buttermilk or regular milk with a tablespoon of vinegar, or just regular old milk.
Below I will also give you tips on making a basic buttercream / chocolate frosting recipe into a Magleby's recipe. Basically, do it by hand. Let your butter sit out and become room temperature, then gently work the ingredients by hand and you have Magleby's method. Others i.e, me) whip the heck out of it.... and use the microwave to soften butter. You can also melt the butter and milk in a sauce pan and get yet another texas fudge like consistency. You decide!

Stir-Fried Beef 'n' Beans
1/2 cup soy sauce
2 T water
1 tsp ground ginger
4 garlic cloves, minced
4 T veg. oil
1 lb boneless beef sirloin steak cut into 1/4 inch strips
1/2 fresh green beans cut in half
1 tsp sugar
1/2 tsp salt
Hot cooked rice
In a bowl, combine the cornstarch, soy sauce, water, ginger, garlic and 2 T oil until smooth. Set aside 1/2 cup. Pour the remaining marinade into a large resealable plastic bag; add the beef. Seal the bag and turn to coat; ref. for 25-30 min.
Drain and discard marinade from beef. In a wok or skillet, stir-fry beef in remaining oil for 4-6 minutes or until no longer pink. Remove and keep warm. In the same skillet, stir-fry beans, sugar and salt for 15 min. or until crisp-tender. Stir in the beef and reserved marinade. Bring to a boil; cook and stir for 1-2 min or until thickened. Stir over rice.
Buttery Bread
6 T sugar
3 T yeast
2 T salt
8 T softened butter
1 T lemon juice
1 egg
12 cups flour
1 cup pwdr milk (optional)
Dissolve sugar in 1 cup warm water
Add yeast to sugar and water, mix and set aside for 5 minutes
Combine all ingredients in a large mixing bowl
Mix into soft dough then let rest for 10 to 15 min.
On a floured surface knead dough for 10 min then place in large greased bowl(I divide the dough in half and throw halves in my kitchen aid mixer then place in separate bowls)
Cover and let rise for 20 min punching down every 5 minutes
Cover and let rise for another 30 minutes
Remove dough and shape into 4 loaves
Place loaves in greased bread pans, cover and let rise for 45 minutes
Bake at 350 for 40 minutes
Place loaves on cooling racks to cool
*place loaves in plastic bags and leave at room temp or immediately freeze. Thaw frzn loaves in their bags overnight at room temp.
* I often make 2 loaves as cinnamon bread. Prepare the same but take 1 cup br. sugar, 2 tsp cinnamon, 2 tabs of melted butter, mix and spread out on dough. roll to shape loaf and bake the same. So yummy!

Lasagna
warm 5 cups of spaghetti sauce of your choice in a saucepan then add about 1 lb of hamburger meat
mix about 2 cups mozzarella cheese with 1/2 cup shredded parmesan cheese, about 1 cup cottage cheese, 1 T parsley, 1 tsp oregano, and 1/4 tsp black pepper.
layer 9 x 13in pan with meat sauce, lay down 3 noodles, top noodles with cheese mix followed by sauce and repeat . After 3rd layer of noodles is placed in pan cover with about 1 cup of plain spaghetti sauce and top with desired amount of moz. cheese and another 1/2 cup shredded parmesan.
bake at 350 for about 30 minutes. This freezes well. allow to thaw in fridge for 24 hours then bake until center is warm.
Peanut Butter Cookie Cups
1/2 tsp salt
1 tsp soda
1/2 cup butter
1/2 cup sugar
1/2 cup peanut butter
1/2 cup brown sugar
1 egg
1 tsp vanilla
2 T milk
mix ingredients, roll into balls and place in greased mini muffin tins. Bake at 350 for 8 minutes. gently press mini p.b. cup into the center of each cookie. Let cool and carefully remove with a spoon.
Easy Breakfast Cake
3 eggs
1 cup plain yogurt
1 small box instant vanilla pudding
3/4 cup water
3/4 cup oil
*mix ingredients and pour in a greased cake pan
top with the following:
3/4 cup baking mix (bisquick)
3-4 T butter melted
1 cup brown sugar
2 tsp cinnamon
*mix ingredients together and "crumble" on the top of the cake mix
Bake at 350 for about 20 minutes then bake at 325 for about 30-30 minutes or until spongy in the center
-recommend serving with a fruit and sausage :)
Fried Pickles
2 eggs
1/4 cup flour
1 cup buttermilk
1 T worcestershire sauce
1/2 tsp vineger based hot pepper sauce (tabasco)
3/4 tsp cayenne pepper
1/4 tsp season salt
1/4 tsp garlic powder
"breading mix"
1 cup cornmeal
2 cups flour
1 tsp salt
1 tsp black pepper
place sliced pickles in the marinade for a couple minutes then dip pickle in the flour mix to completely cover the pickle slice. place in hot cooking oil in a medium size sauce pan. Pickles will begin to float as they start to cook. Carefully turn pickles until browned to your desire. Place on a plate lined with a paper towel.
*this recipe works with a deep fryer as well if you have one
"Dipping Sauce"
high quality ranch or hidden valley mix with sr. cream. For every one cup of the ranch, add about 1/2- 1 tsp cayenne pepper or cajun seasoning and black pepper to taste.

Dump half a bag of frozen chicken breast tenderloins into a large "cooking bag." add 1 cup water and a packet of lipton onion soup mix and place in a casserole dish. (follow directions for using the bag....twist tie, cut slits, and so on) Bake on 325 for about an hour an a half.
Keep juices for gravy,
*take about 2 spoonfuls of cornstarch and add to about one cup of water, stir and add to the the chicken juices. bring to a boil and remove from heat. Serve with mashed potatoes and the shedded chicken.
1-2 lb ground beef
small container of ricotta cheese
3/4 cup mozzarella cheese
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/8 tsp basil
1/8 tsp oregano
3/4 cup spaghetti sauce
1 small box frozen chopped spinach
Boil jumbo shells according to the directions on the box. Cool. Thaw and cook spinach according to the directions. Mix ricotta, spinach, mozz. cheese, garlic powder and salt and pepper. Brown the ground beef, then add basil and oregano to the meat. Stir the meat into the cheese mixture. Pour 3/4 cup sauce on the bottom of a 9x13 pan. Stuff shells and place in pan. When the pan is full, cover with desired amount of sauce and top with additional cheese. Bake for about 20 min on 350.
*Easy option for kids is to stuff shells with only meat and cheese!
1 small onion sliced
2 T olive oil
1 large onion diced
2 garlic cloves
1 bell pepper
4 large tmtos diced or one can of rotel
1 and 1/2 T cumin
2 T tmto paste
1 bay leaf
*salt and pepper roast and brown on both sides in cooking oil in a large pot. Add 2 cups of water and the small sliced onion. Bring to a boil and reduce to med-low heat, cover and simmer for about 1 and half hour or until tender. Shred beef. Heat olive oil in a pan, add garlic, onions, peepper and saute for 5 min. Add tmtos and tmto paste, cumin, bay leaf and simmer for 5-10 minutes. Remove bay leaf and add beef.
This can be used as a taco meat, served over rice, the filling for potstickers or poured over a salad. Anyway you dish it, it will be delicious!

Mexican Breakfast Casserole
cook 1-2 lbs of ground beef then stir in one jar of salsa. Dump meat mixture over the potatoes, top with cheese and bake at 350 for about 20 minutes or until the cheese melts.
*this is great with scrambled eggs!
Macaroni chili
1 15 oz can of tmto sauce
1 14oz can of diced tomatoes
1 cup kernel corn
1 small diced bell pepper and/or onion
1 pkg of slow cooker chili seasoning
1 cup cooked pasta (rotini or macaroni)
2 cups grated cheese (can adjust to taste)
cook the beef....in crock pot place all incredients except for pasta and cheese. Cook on low for 6 hours or on high for 3. Add pasta and cheese 10 min before serving.
