Easy pumpkin muffins

1 box of cake mix ( almost anything will work but I suggest spice or carrot)
1 can of pumpkin purée
2/3 cup milk
1 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp cloves

Mix all ingredients and bake at 350 for approximately 12- 15 mins or until tops are springy to the touch

Banana Chocolate Chip Cake

1 and 1/2 cup flour
2/3 cup sugar
1 and 1/2 tsp baking powder
1/4 tsp salt
1 cup mashed banana (3 bananas)
1 egg
1/2 cup butter
1/4 cup milk
3/4 cup chocolate chips

combine wet ingredients and add to dry ingredients.  Bake at 350 for about 35 minutes or until bounces back to the touch at center.  This makes for an exciting breakfast for the kids.  Serve bacon on the side to add some salt to the sweet! :)

Syrup for pumpkin waffles

1 stick butter
1 cup sugar
1/2 cup buttermilk
1 tsp. Karo
Bring to boil, remove from heat. Add 1 tsp baking soda and 1 tsp vanilla

Pumpkin Waffles

2 cups flour
2 T baking powder
1 T. sugar
1 T. Cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
4 eggs
1 and 1/2 cup milk
1/2 cup melted butter
1 tsp.vanilla
1 cup pumpkin

Easy Breakfast Cake

1 yellow cake mix
3 eggs
1 cup plain yogurt
1 small box instant vanilla pudding
3/4 cup water
3/4 cup oil

*mix ingredients and pour in a greased cake pan

top with the following:
3/4 cup baking mix (bisquick)
3-4 T butter melted
1 cup brown sugar
2 tsp cinnamon
*mix ingredients together and "crumble" on the top of the cake mix

Bake at 350 for about 20 minutes then bake at 325 for about 30-30 minutes or until spongy in the center
-recommend serving with a fruit and sausage :)

Mexican Breakfast Casserole

Cook a 2 lb bag of southern style hash browns. Layer on bottom of 9 x 13 casserole dish.
cook 1-2 lbs of ground beef then stir in one jar of salsa. Dump meat mixture over the potatoes, top with cheese and bake at 350 for about 20 minutes or until the cheese melts.
*this is great with scrambled eggs!

Buttermilk Waffles

Combine:
8T butter
3 eggs
1/2 cup sugar
1 tsp vanilla
1 and 3/4 cup buttermilk

add:
1 and 3/4 cup flour
1/2 tsp salt
1 and 1/2 tsp baking soda
1 and 1/2 tsp baking powder

Yummy!

*serve with homemade syrup: 2 cups sugar, 1 cup water and 1/2 tsp maple extract...stir over medium high heat until it starts to boil, remove from burner and let sit (stays good in fridge for a long time)

McDonalds Hotcakes

1and 1/2 cups 7-up (lemon-lime soda)
2 eggs
2 tablespoons oil
2 tablespoons sugar
3 cups bisquick baking mix

throw ingredients together in mixer and brown both sides on oiled griddle. This is a copycat recipe which very much resembles mcdonald's hotcakes, especially in texture!
